Quick Chocolate Mousse

Here's a quick, delicious dessert recipe that I made this evening that couldn't be easier:

Quick Chocolate Mousse

  • 1 (14 oz.) can Eagle Brand Sweetened Condensed Milk
  • 1 (4-serving size) package chocolate instant pudding mix
  • 1 cup cold water
  • 1 (8 oz.) container frozen whipped topping, thawed

Beat sweetened condensed milk, pudding mix and water in a large bowl. Chill 5 minutes. Fold in whipped topping. Spoon into serving dishes; chill. Garnish as desired.

I hope you get a chance to enjoy this light treat.

Proud Peacock

Being under the weather since the Alaska trip, I wasn't up to putting a scrapbook page together. However, I did want to post a new picture from a little over a week ago. I thought this colorful peacock was so beautiful, I just had to share. This magnificent bird was wandering the grounds at Lakeside Kennels in Ingleside, Texas.

Candy Cane Coffee Spoons

I realize it's not yet Halloween, but I wanted to post this cool recipe before I completely forget about it. I made these the year before last during the Christmas holidays for co-workers in my department. They were so pretty and inexpensive. Just stir one in a cup of coffee. Here it is - Candy Cane Coffee spoons:
  • 1 cup (6 oz) semi-sweet chocolate chips
  • 1 candy cane or 5 peppermint candies, crushed
  • 12 heavy-duty plastic spoons in Christmas colors

1. Put candy in a baggie and crush with a rolling pin.

2. Melt chocolate.

3. Dip spoons into chocolate to fill.

4. Sprinkle with crushed candy.

5. Place on waxed paper covered cookie sheet to cool. Wrap with cellophane and tie with ribbons for gifts.

Dessert Buffet

This is my lovely friend, Florine, whom I met on our Alaskan Cruise from 9/13 - 9/20/09. She was also my neighbor in the next cabin. We were given so many desserts by the servers at the dessert buffet (some we asked for, and plenty were just put on our plate.) We just said, "Bring it on!" We will diet when we get home.

Beauty In Tracy Arm

A wonderful friend and email buddy of mine who is a digital designer in California, designed this layout for Bill and me. She posted the layout on her layout blog, and in her digital design shoppe.
I was very honored that she chose to do this for us. The picture was taken on our Alaskan cruise (on the Star Princess) while we were enjoying scenic cruising through Tracy Arm Fjord. It was a breathtaking experience.

God's Artistry

We went to Port Aransas while the dogs were getting groomed in the morning, and saw plenty to photograph. I saw these colorful dragonflies, while looking for alligators, and captured the moment. God's artistry is certainly in nature everywhere we look.

Yellow Warbler in our Yard

What a wonderful surprise to see a Yellow Warbler in our back yard this summer. It was the only one we have seen all year long.
